Dino Bonin Winery
Wine - ArnadThe wine business began in 1973 with his father Cesarino, and Dino Bonin has continued it since 1987. Currently about 2.5 hectares of vineyards are cultivated, all located in the municipality of Arnad and planted in rows with Guyot-style pruning. The area is sunny and breezy, characterized by a pleasantly mild climate which favors the development of numerous types of vines. The annual production is around 12.000 bottles, divided up among seven qualities of wine, all DOP (Protected Designation of Origin), in a range that covers the complete span of a meal, from aperitifs to desserts.

How to get there
Coming from A5, exit at the Verrès tollbooth, follow the SS 26 for 4 km in the direction of Ivrea. Once in the town of Arnad, at the roundabout follow the signs for the sanctuary of Machaby. After about 1300 meters, turn left onto a dead-end street.
"Cave Coopérative de l’Enfer - CoEnfer" WineCooperative
Wine - ArvierA legend tells of two wayfarers who, passing through Arvier and arrived in the parish, asked to see the priest; the priest housekeeper replied that it was not possible because the curate was in “hell”. In reality, she referred to the Enfer vineyards, the magnificent natural amphitheater located on the left bank of the Dora Baltea and so called because it is exposed in full sun, to the south, with a very hot microclimate, despite the altitude of 800 meters.
Viticulture in Arvier has roots far back in time; documents attest as early as 1312 the possession of vineyards by the inhabitants of the place.
Heir to this tradition, the Co-Enfer cooperative winery was founded in 1975. Today it manages the entire wine-making process, from the cultivation of the 5 hectares of land, conferred by more than 100 members, to the marketing of the approximately 35.000 bottles produced every year adding the five labels: Enfer, Clos, Digne du Pape, Mayolet and Triskell.
In the cellar, an original reinterpretation of traditional mountain architecture, the grapes are processed according to traditional methods but with the help of modern technologies.
Intense, full-bodied, Enfer d’Arvier was among the first Valle d’Aosta wines to obtain the DOC Denomination, in 1972. It is a red wine made in purity with grapes of the autochthonous Petit rouge grape which, if necessary, can be integrated, up to a maximum of 15%, with 5 other grapes.
Since 2016, the Triskell (brut classic method sparkling wine) has been produced with the native Mayolet grape variety and rests with the yeasts in the bottle for a period ranging from 36 to 48 months, before disgorgement and marketing.
For some years now, winemakers who are not equipped for production have been able to bring their grapes to the cooperative which takes care of the winemaking, bottling, packaging and storage operations against payment of the service.

How to get there
From Aosta, take national road 26 in the direction of Courmayeur until the village of Arvier (17 km). After the Hotel Le Clou, on the right, leave the national road at the railway station sign and follow the signs for the Co-Enfer.
Coming from the Mont Blanc Tunnel, after the Arvier roundabout go through a wide right curve and turn left at the sign of the railway station. Then follow the signs for the Co-Enfer.

Thomain Danilo Winery
Wine - ArvierThe Thomain winery is based in the small village of Arvier, about 14 kilometers from Aosta, and consists of two hectares of vineyards on the right side of the Dora Baltea, called, since ancient times,by the French name for “hell” - enfer - due to the high temperatures and aridity of the soil that the peculiar exposure and orographic conformation give it.
A unique DOC (Controlled Denomination of Origin) wine is born here for its characteristics and organoleptic properties, called the Enfer.
The history of the Thomain company begins in 1920 with Giuseppe and continues with the later generations, with his son Maurizio and now with his grandson Danilo.
The Thomain winery is completely family-run.

"Cave des Onze Communes" Wine Cooperative
Wine - AymavillesLa Cave inaugurated its production with the 1990 grape harvest.
La Cave des Onze Communes has made it possible right from the start to recover territories doomed to abandonment in time and, thanks to the union of small and medium-sized enterprises, to use the best technologies to produce only high-quality wine, focusing above all on increasing the cultivated area for DOC (Controlled Designation of Origin) wines.
Its vineyards, located in eleven municipalities, cover an area of about 70 hectares, worked by the 160 wine growing members, and they make it possible for the cooperative to produce more than 500.000 bottles every year.

Gerbelle Didier Winery - L'Atoueyo
Wine - AymavillesThe Didier Gerbelle winery was officially founded in 2006 as a continuation of the family traditions which have their roots at the beginning of the 20th century. Didier, who graduated in oenology in 2006 from the glorious oenological school of Alba, took over the company run first by his paternal grandparents and then by his parents, and embarked on his own along the path of winemaking.
The company has about 2.8 hectares of vineyards and produces grapes that are almost in their entirety the company’s own grapes. The vineyards are located in the municipalities of Aymavilles and Villeneuve. The main vines cultivated are Petit Rouge, Cornalin (Broblanc biotype), Premetta and red-berried Fumin (authoctonous); Pinot Grigio and Gewurztraminer with white-berried grapes.
The vines are grown using the espalier systemby adopting the simple Guyot system and grown on poor and stony soils. Production is very limited and is around 15.000 bottles per year. All of the stages of production, from processing the vineyard to bottling, including subsequent marketing, are followed directly by the owner.
In 2019 Didier Gerbelle acquired the company L’Atoueyo also located in the municipality of Aymavilles, making it possible to increase and diversify the bottles produced.

The company and a winery are located 200 meters from the main square of Aymavilles; a second winery and the store are located in the hamlet Urbains n. 9.
Les Crêtes Winery
Wine - AymavillesThe Les Crêtes winery was founded in 1989 by Costantino Charrère and is now managed by his family who, owners of a historic 18th-century water mill and the ancient wineries of Via Moulins, have been involved in the production of agri-food for five generations. The area devoted to the cultivation of vineyards extends for 25 hectares, and the total annual production is 200.000 bottles.
The Rifugio del Vino (Wine refuge) of Les Crêtes was founded in 2016, as an emotional tasting room, next to the historic winery, to which it is structurally connected. The Charrère family opens its doors to enthusiasts who intend to undertake the philosophy and knowledge of the world of Les Crêtes.
Rifugio del Vino, because it lies in the Alps with a reference to the typical high-altitude architecture and because it is a construction designed to protect wine, has an authentic heritage of the mountain terroir. Its profile is reminiscent of a mountain massif, the same that becomes the symbol of Les Crêtes and distinguishes its brand. Under this large covered courtyard there is space for the production of wine and a wine shop, held together by an interesting itinerary for a visit.

How to get there
Coming from the A5 motorway, take the Aosta Ovest-St. Pierre exit. Take the state highway 507 keeping to the right at the crossroads, and continue on towards Cogne/Aymavilles until the roundabout of Piazza Chanoux in Aymavilles. At the roundabout, take the 4th exit (direction Gressan) to the village of Ferrière. The company is located 400 m on the right.
Dairy Fromagerie Haut Val d'Ayas
Dairy farms - BrussonThis dairy farm was founded in 2004 with the aim of streamlining the production and transformation of the milk of the Valley according to the methods of ancient cooperative dairies, where different farmers used to work together alternating in shifts. The Fromagerie Haut Val d’Ayas brings together 65 local farmers who contribute with their own milk and processes almost two million litres of milk a year, obtaining about 18,000 types of Fontina cheese. Areas and museums depicting scenes of rural life lie at the heart of the cooperative and panels are displayed inside which illustrate the journey of the milk, from the milking process to transformation into cheese; you can also watch the Fontina cheese being made first hand.

Fresh and matured dairy products, honey, wine, juices, spirits, medicinal herbs, local vegetable products (in summer-autumn), frozen yoghurt, products baked with yoghurt and butter from the Fromagerie.

Dairy farms - BrussonThis small family-run business started off as a simple self-consumption project but reinvented itself in 2003, expanding into the marketing and sale of its excess products, adhering to the concepts of the short chain and zero-km production.

Minuzzo Gabriella Winery
Wine - Challand-Saint-VictorGabriella Minuzzo winery is located in thevillage of Challand St. Victor, in the Ayas valley.
It is the only winery in Val D’Ayas and it has its roots in the history of the family who, for over 50 years, has been cultivating the vineyard and producing sincere wines that feel and restore the imprint of the “terroir”.
The land cultivated with grapevines extends for about 8.500 square meters and is sandy. Exposure to solar radiation from the south-east and the south-west gives the Pinot Noir DOC (Controlled Designation of Origin) and the high-quality Müller Thurgau DOC.

Perraillon Yves and Edy's farm "Lo Copafen"
Dairy farms - ChambaveThe Lo Copafen farm is located in the municipality of Chambave, and nature and time have maintained a fundamental role in the production of cheese, the same as they did 100 years ago.
Today, the Perraillon family, by adopting a more technological and innovative process, has preserved the organoleptic characteristics of the cheese products of that time and, for some years now, has also been producing cured meats. A large number of the cheeses are matured at high altitude and rest in a cellar that can store up to 2,000 wheels.
The farm produces Fontina, butter, goats cheese and Toma, available for sale in the shop.

Guided visit of stalls, the dairy and the traditional store throughout the year, subject to booking by phone.
After the visit, it is possible to taste the products.
